Crab cakes – At first blush, the idea of putting a raw crab cake patty on the grill like a hamburger might sound like a recipe for disaster, and on the bare grill, it might be, but Seaver said restaurants in particular are wood-firing crab cakes in a cast-iron pan, right on the grill. It infuses them with the grilled smokiness, and adds a fun gimmick that is working with diners. “You pull off the skillet, and it comes sizzling, fajita-style, to the table.” There’s no reason why people who enjoy crab cakes in the oven at home couldn’t use a cast-iron pan to do the same thing on the grill, and Americans are beginning to figure that out.
