Identified odor-active compounds and their odor characteristics with each retention indices are shown in Table 4. Identified odor peaks, retention indices of each system and odor compounds are shown in this table. From the odor compound identification, the odor peaks having “sour” characteristics were identified as acid group. The two odor peaks having retention time below 500 were identified only with their retention time. With a bag-thermal desorption–cryofocusing–GC/FID/olfactometry system, the sample could be concentrated enough to be analyzed and evaluated since 500ml sample was focused. However, it was little difficult to identify all the odor compounds in GC/AED, MS analysis since different sample introduction method was used. As a result of it, some identified odor peaks in GC/O analysis could not be identified in GC/AED, MS analysis. To get better results, it is recommended to use the same sample introduction method.
