Methods for measuring the antioxidant capacity in vitro can be
divided in two categories according to the chemical reaction
involved. The first type is electron transfer (ET) reaction, which
includes the DPPH free radical scavenging method. The second
type is based on hydrogen atom transfer (HAT) reactions, such as
the ORAC method (Zulueta et al., 2009). Both methods were used
to evaluate the antioxidant capacities of sesame seed polar-soluble
crude extracts in vitro.
