Fourteen (14) meat and poultry processors plus a number of
other processors (in ZZ) that had all negative samples exceeded the
regulatory limit for acetate (2.5 mg/g) on at least one occasion
based on the samples collected (see the acetate range in Table 1).
The mean acetate concentrations ranged from 0.66 mg/g (code I,
Table 1) to 1.56mg/g in L. monocytogenes-negative samples (code B,
Table 1) and from 0 to 5.75 mg/g for L. monocytogenes-positive
samples (code S, Table 2).
