3.9. Fruit quality
Fruit firmness and TA of apple fruit were significantly (P ≤ 0.05)
reduced and SSC:TA ratio significantly (P ≤ 0.05) increased, with
delayed harvest in both years and locations (Table 1). SSC of the
fruit did not exhibit any significant change with delayed harvest
in both years at Perth Hills and in 2004 at Donnybrook. SSC of the fruit remained between 14 and 15◦Brix (Table 1). TA was also
significantly (P ≤ 0.05) lower as harvest was delayed (Table 1).
