The iodine value is an empirical test that indicates the unsaturation degree of oil. The seed oil was more unsaturated than the pulp oil, by having larger iodine value, 94.28 and 105.97 gI2/100 g, respectively. In maize oil, Winkler Mosera and Breyer(2011) showed iodine value of 122.4 g I2/100 g, higher than the jatoba fruit oils.
