Starch molecules are glucose polymers linked together by the alpha-1,4 and alpha-1,6
glucosidic bonds. In human digestive system, starch is digested into glucose units in order to
make use of the carbon and energy stored in starch. Amylases are also essential in many
industrial processes such as food, fermentation and pharmaceutical. In food industry, starchconverting
enzymes are used in the production of maltodextrin, modified starches, or
glucose and fructose syrups [Fig 1]. The economically important crops such as wheat, rice,
maize, tapioca, and potato can be used as source of starch.
