Forty panelists participated
in each test, with about 80 people total participating
in the study. Consumers were presented with 25 ml of milk
in a plastic cup labeled with a random 3 digit code and
sample order. Milk was poured 30 min before each test and
kept and served at 4 1C. Samples were presented to
consumers in individual booths and data was entered into
computers using Compusense software (Guelph, ON,
Canada). Consumers were asked ‘‘Please rate how well
you liked/disliked the sample.’’ Responses were recorded
on a standard 9-point scale (9 ¼ like extremely,
5 ¼ neither, 1 ¼ dislike extremely).
