Strawberry samples were stored in glass jars at 10 °C for 6 days, opening them every day to renew the atmosphere of the headspace in order to carry out the analysis of respiration rate, changes in
optical and mechanical properties and loss of liquid phase. The temperature was fixed at 10 °C to simulate the abusive tempera- ture that commonly occurs at retail stores and to accentuate any beneficial or negative effects of the post-harvest treatments (Saftner et al., 2003).
