Ground rice (3.0 g, 14% wet basis) was weighed directly in the RVA canister, and 25 mL of distilled water was then
added to the canister. The sample was held at 50 C for 1 min,
heated to 95 C in 3.5 min, and then held at 95 C for 2.5 min. The
sample was cooled to 50 C in 4 min and then held at 50 C for
1 min. The rotating speedwas held at 960 rpm for 10 s and thenwas
maintained at 160 rpm during the remaining processing time. The
values of the pasting temperature, peak viscosity, holding viscosity,
breakdown, final viscosity and setback parameters were recorded.
