Organic acids
Table 5 lists the organic acids contents in the
muscle extracts from L. vannamei cultured in sea
water and low salinity water. The principal organic
acids were acetic acid and malic acid. The quantities
of acetic acid and oxalic acid in the extracts
from L. vannamei cultured in sea water were lower
than those from samples cultured in low salinity
