The slaughtered rabbits were bled, and the skin, genitals, urinary
bladder, gastrointestinal tract and the distal part of the legs were removed.
Carcasses (with head, thoracic cage organs, liver, kidneys,
perirenal and scapular fat) were weighed, then chilled at +4 °C for
24 h in a ventilated room.
