production rate with increase in inlet air temperature and decrease in
feed flowrate during spray drying of inulin.With increase in concentration
of SPI in the feed material process yield increased which may be
due to preferential migration of protein to the air water interface of
atomized feed droplets resulting in the formation protein-rich film.
This film is converted into a glassy skin when subjected into hot and
dry air. The resultant skin is capable of overcoming the coalescence of
droplets as well as sticky interactions of the particles at the drying
chamber of the spray-dryer
