antioxidants such as (BHA), (BHT),
and ´ -tocopherol. The water and ethanol extracts of fennel seeds
showed strong antioxidant activity. Hundred g of water and
ethanol extracts exhibited 99.1% and 77.5% inhibition of peroxidation
in linoleic acid system, respectively, and greater than the effect
of the same dose of -tocopherol (36.1%). Total
phenolic compounds in fennel seeds extracts were determined as
gallic acid equivalents.
