While anaerobiosis will cause ethanol and
acetaldehyde production throughout the fruit pulp the application of acetaldehyde
only affects the outer portion of the pulp. In tomato the calyx scar is the main
gas exchange route for the fruit (Burg and Burg, 1962) and it is around this point
that acetaldehyde has the most inhibitory effect on ripening (Pesis and Marmans@,
1993).
