Kalt et al. (2000) reported 76% losses of monomeric anthocyanins from incompletely full jars of blueberry juice (as in the present
study), stored for 6 h in the dark at room temperature, although
there was no loss from those that were completely full, with no
space for the entrance of air. Thus a preventative measure against
the loss of anthocyanins could be the use of vacuum-closed
packages, or, in the case of juice, filling the space completely in
previously de-aerated recipients.
