The methodology used in this study allows us to have information
of the product temperatures (sliced ham) in the logistics
circuits, from the end of production to consumption. A data
logger was placed between 2 packages in such a way that it
could not be seen by different stakeholders. Thus, the product
time temperature profile represents the real condition.
The Frisbee field test confirms other studies highlighting
the most sensitive links: transportation after the purchase by
consumer and especially the household refrigerator. Despite
the evolution of the regulation that imposes France since 2002
to indicate the cold zone in refrigerators where the sensitive
products should be placed, the percentage of product having
the temperature below 4 C has decreased. This means that
the preservation of products at home has not improved.
Conservation in step “display cabinets” seems to have
improved in the last 10 years, even though our study concerns
only one distributor in France, this trend seems to be
representative.
Data from this field test were introduced into the database
developed under the project Frisbee, and will be compared
