The most of consumers were female, age lower than 21 year old, education level mostly were
high school degree, marriage status mostly were single, income level mostly were lower than 5,001
bath per month. The sensory score for color, flavor, taste, texture and overall preferences of cookies
at 25% GRB flour compared to commercial cookies are shown in Table 4. The color, taste, flavor,
texture and overall liking of cookies at 25% GRB flour were significantly higher than commercial
cookies (p≤0.05). Ninety-nine percent of tested consumer accepted and would buy germinated
brown rice cookie.
