However, we remark that biochemical treatment based on the use of citric acid has a small effect on the thyme drying kinetics at low concentration (C1).
However, when the concentration is about 5 g/L, the citric acid modifies the drying rate.
This result can be explained by chemical links type hydrogen done between the product and citric acid.
Thus, the moisture dry content became higher for the treated thyme than witness thyme.
