In Table 1 are reported the values of volatile component loss of
frozen-dried, convective air-dried at three different temperatures
and biofilm-dried apples for two volatile components (ethyl acetate, ethyl butyrate); data reported are the average of three measurements and are limited to the first eight hours of treatment,
due to the complete loss of volatile compounds of all air dried samples. It is worth to stress that in the first eight hours biofilm dried
samples have lost only about 30% of volatile components and
freeze dried samples have lost around 65%.
