Materials and Methods
1. Microbial and chemical contamination were surveyed by sampling some
minimally processed durians from 3 wet markets and 4 supermarkets in
Bangkok. They all wrapped half of the pulp with wax papers and put in foam
trays, over-wrapped with stretch film except one sample that just wrapped
the pulp with wax paper and put it in a plastic bag. The organophosphate,
carbamate, and toxic heavy metal : lead, cadmium, mercury and arsenic
residues were determined. Microbial contaminants were determined using
AOAC 1990 : total viable count ; Yeast & Mould ; Escherichia coli ;
Salmonella spp. ; Staphylococcus aureus ; Clostridium perfringens ;
Bacillus cereus and Listeria monocytogenes.
