Air curtains
b) Air curtains are recommended to prevent insects from entering the building at openings such as drive-through windows and rear and/or delivery doors, especially when there are flying insect present.
c) Air curtains should be wired so they turn on when the window/door is opened and cannot be easily unplugged or disabled.
d) Entrance doors must be kept closed between use, however, in some cultures, doors may be kept opened to let the customers know that the restaurant is opened for business. In these instances, a double vestibule door and/or a vertical-mounted air curtain must be used to minimize flying insect entry. The air curtain must be installed so that it comes on and remains on whenever the door is opened, and cannot be easily overridden or bypassed.
Screening
e) Screens should be 1.03 mm (16 mesh) nominal aperture size to prevent the incursion of gnats, mosquitoes and other insects.

2.5(A) b) Backflow Devices
• Back flow prevention devices and assemblies should meet American Society of Sanitary Engineers (ASSE) design requirements and bear the respective seal of approval or be equivalent in design.
2.5 (A) c) Floor drains
• Direct connections to the sewage line that are mandated by regulatory/ government requirements:
o Should be connected directly on the inlet side within 1.5 m (5 ft.) of the sink. This and the drain line from the sink will be properly trapped and vented.
o The following diagram shows a floor drain connected directly on the inlet side within 1.5 m (5 ft.) of a warewash machine with the drain line from the machine properly trapped and vented.
