The temperatures (Tm) and enthalpy (ΔH) of melting of granulated honeys in hermetically sealed aluminum pans were determined at a scan rate of 1 °C min−1 (heating scan up to 70 °C). All the reported data are the average of at least three replications. One-way analysis of variance at 5% significance level was used to determine significant differences in the melting temperature (Tm) among granulated honeys stored at different temperatures for 222 days. Tukey test was performed using the software package Statistica 6.1 (Stat soft Inc., Tulsa, OK, USA).
Gordon and Taylor (1952)k parameter and Tg of dry amorphous solute (Tg dry) were obtained by fitting experimental Tg data with Table curve 2D for Windows 95 software (SPSS Inc., Chicago).
