3. Results and discussion
3.1. Blanching
The initial weight of the samples before blanching was 3.2 ± 0.7 g. After blanching, the average weight was 3.5 ± 0.6 g.
Blanching brings a significant increase (p < 0.05) in weight (6.9%).
This weight gain can be explained by the water absorption that occurs during blanching by immersion in hot water, which entails changes in product structure
