Descriptive statistics were conducted on all socio-demographic
items and on fruit and vegetable consumption changes for the CSA
member and family. Multivariate OLS regression analysis with progressive adjustment was used to test the estimated effect of the
NEP score on sustainability-related behaviours, money spent eating out per week, times eaten out per week, and family involvement in food preparation while controlling for demographic
characteristics. Race and Hispanic descent were collapsed into
dichotomous variables for this analysis. Race was condensed into
either ‘white’ or ‘other’ due to a low number of observations for
all other races except white. The category ‘other’ included all races
except white. The Hispanic origin categories were collapsed into
‘Hispanic’, which included Mexican and other Hispanic origin,
and ‘Not Hispanic.’ The reference values for the dichotomous variables were white, non-Hispanic, and female. Categorical variables,
including race, ethnicity, and gender, were evaluated as potential
effect modifiers. Age, income, and education were treated as continuous variables. All dependent and independent variables were
tested to assure they did not violate any OLS assumptions and
transformed to adjust for any violations. A p-value of 0.05 or smaller was considered to be statistically significant.
