2.6. Statistical analysis
For either minced meat or sausages, two independent manufacturing processes were carried out with the same formulation and technology. In each manufacture, three sample units (minced meat or sausages) were taken per sampling day (n = 6). All analyses were performed by duplicate. The results reported in this study are the
mean obtained from all the data recorded for each parameter analyzed. Statistical analysis was carried out using Statgraphics Centurion XVI.I (Statpoint Technologies, Warrenton, VA). A one-way ANOVA was conducted to rule out the effect of the concentration of nitrate/nitrite on each single parameter (aw, pH and microbial counts) analyzed
on each sampling day. Statistical significance was identified at 95%
confidence level. Duncan's multiple range test was used for mean
comparisons.
