As a relatively common food additive, lactose is used to enhance many non-dairy foods, especially processed and baked goods. The main functional benefits associated with lactose are its solubility, low level of sweetness, pleasant flavor and texture. Adding lactose powder makes food bulkier and helps it retain moisture. It also absorbs food coloring and deters the proliferation of mold, which extends shelf life. The process of pasteurization -- which involves high heat -- has no significant effect on lactose. Many different non-dairy foods and beverages contain lactose, so read labels carefully if you are lactose intolerant.
