2.8. Sensory properties
The acceptability and purchase intent evaluations were performed
by 70 randomly recruited untrained judges, of both genders,
over 18 years old. Each judge received 40 mL of each dessert
(5 C) in plastic cups randomly encoded with three-digit numbers,
along with water at room temperature and the acceptability and
purchase intent analysis forms.
The acceptability form was composed of a hedonic scale with 9
scores as follows: 1 corresponded to “I extremely disliked it” and 9
to “I liked it a lot” in relation to the sensory attributes of taste,
consistency, and overall impression. The purchase intent form
presented a hedonic scale of 5 points where score 1 corresponded
to “I certainly would not buy it” and 5 to “I would certainly buy it”.
