attached to the opening of each filled bag in which the cotton wool
could be plugged. The adlay-filled cotton wool-plugged bags were
autoclaved at 121 °C for 15 min and then cooled to room temperature.
Each bag was inoculated with 1 cm diameter of each Monascus strain
from a PDA plate, in triplicate. The cultures were incubated for 28 days
at room temperature (32–35 °C). After incubation, the fermented adlay
was dried in a plastic bag at 55 °C for 3 days. Dried adlay angkak was
ground to a fine powder of 80 mesh (Pinthong and Pattanagul, 2004).
