It sounds like you are well aware of the standard food and water precautions: boil, it bake it, peel it or forget it. Equally important is washing your hands before you eat, and being aware of not touching your hands to your mouth when they haven't been washed. Drink only bottled water, and even brush your teeth with bottled water.
If you are very aware of the food and water precautions, you will be aware of when you choose to violate the precautions. I've been traveling to SE Asia for over 25 years, and in places I don't know (or where I do know the standards of hygiene are poor) I adhere pretty strictly to the precautions. In places familiar to me, I make careful choices about when to violate those standards. I eat salads at many places in Bangkok, for instance.
If you are staying at 4 or 5 star hotel, many will say on the menu that they wash all of their salads and vegetables in purified water.
I also avoid buffets and I do not eat the beautiful cut fruit you see on the streets. I only eat cut fruit at my hotel or at a good restaurant.
In general, I do not eat street food. The only places I do eat street food are in Malaysia and SIngapore where they have hawker centers with sanitary facilities.
There are plenty of people here who do eat street food and have not gotten ill, but there are also people here who have gotten ill from street food.
