3.6. Rice hardness
The hardness values of the white rice grains after they were
cooked are presented in Table 2. The hardness of the rice that was
stored in the silos that were equipped with exhausters increased
during the last month of storage. In contrast, the hardness of the
rice that was stored in the silos without exhausters was unchanged
at up to 3 months of storage and increased after the sixth month
(Table 2). The behavior of the hardness values was different according
to the treatments. Comparing the differences according to
the storage periods showed that there was a significant difference
after 9 months, whereby the rice in the samples that were collected
from the silos without an exhauster system were harder than the
rice in the samples that were collected from the silos with exhausters
in the ninth month of storage.
