Fuzhuan brick tea is another microbial fermented tea characterized by a fungal fermentation
involving Aspergillus, Penicillium, and Eurotium as the major organisms
(Mo et al. 2008). It is uniquely found in China.
13.2.2.3 Miang
In the northern part of Thailand, fermented tea leaves called miang are consumed as a
snack with salt or with condimentssuch asroasted coconut orshredded ginger(Figure 13.1).
Young tea leaves are collected, tied into small bundles, and steamed for 2h or more
to inactivate the polyphenol oxidases (Phithakpol et al. 1995). After cooling, the leaf
bundles are carefully packed in a cement tank lined with banana leaves, and covered
