Gluten-free and naturally gluten-free
claim "gluten-free" shall not be permitted for a food that
(a) contains an ingredient that is or has been derived from any species of the significant cereal
(b) contains equal to or less than 20 mg/kg gluten in the end product, and the level of
gluten is determined by the R5 Mendez Enzyme-Linked Immunosorbent Assay (ELISA) for
gluten (as described in Guideline 7), or other Codex-recommended methods; and/or
