2.6. Quality study
The quality of a strawberry beverage containing PEF processed
strawberry purée was evaluated. Beverages were produced by add-
ing sweetener, color and flavor to the purées. Samples were pack-
aged in 1 l plastic bottles. An accelerated aging storage study was
performed by storing the closed bottles at 40 ?C in a Sanyo
Incubator (model MIR 253, Ora-gun, Gunma, Japan) for 24 weeks.
The beverage industry nearly always tests new products under
accelerated conditions, as they do not have the time to test prod-
ucts for years prior to launch. A standard estimate used in the bev-
erages industry is that 1 week at 40 ?C is equivalent to 1 month of
