Aspergillus niger is the most practical resource of tannase
because this fungus has been approved as a GRAS (generally
regarded as safe) material by FDA and developed in some scaled-up
processes to produce different enzymes (Aguilar, Augur, FavelaTorres,
& Viniegra-Gonzalez, 2001; Selwal et al., 2010 ). Tea
byproduct (tea stalk and tea powder) which is cheap and rich in
tannins and carbohydrates, i.e., cellulose and hemicellulose, is a
potential source to produce the tannase via fermentation. In our
previous study, a tannase expressing strain A. niger JMU-TS528 has
been isolated, resulting in a successful solid-state fermentation
(SSF) process to produce tannase (Wang, Ni, Cai, & Xiao, 2013), by
taking advantages of using tea byproduct in light of the lower cost
and higher productivity in comparison to other studies (Yadav,
Aggarwal, Kumar, & Kumar, 2008). Considering the fermentation
process may affect the property of an enzyme by the posttranslational
modification, it is not sure the tannase yielded by
the SSF has a desirable characteristic as other tannases do. Thus, the
present study was aimed to investigate the enzymatic properties of
the tannase prepared by the SSF and its effectiveness to transform
the catechins in tea infusion. In addition, the dynamic trend was
