Conversion
of accumulated pyruvate to acetoin is also an important mechanism
for pH homeostasis in L. plantarum [30]. The L. plantarum
VL103(pMH) and derivatives produce increased amount of acetoin
compared to the wild type. However, the production of acetoin
does not lead to the conversion of NADH to NAD+ while succinic
acid biosynthesis results in the consumption of 2 mol of NADH
