1 pork intestine and pork liver to boil until well done, scoop out of the water and leave it to cool. Thinly sliced.
2 Marinate minced pork, grounded white pepper and light soy sauce. Knead well and set aside
3 Bring congee rice and plenty of water to the boil over high heat. Turn down the heat to medium and simmer until the rice are cooked.
4 Shape marinated pork into ball shape and add to the cooked rice, gently stir until marinated pork are cooked. Season with fish sauce light soy sauce before turning off the heat
5 Scoop the congee to the bowl, add sliced liver and intestine, julienned young ginger, thinly sliced spring onion and coriander and sprinkle with crispy garlic before turning off serving
