Spanish Rice
Ingredients
olive oil 1TBSP
butter 1TBSP
rice 1 Cup
chicken broth 1 Cup
tomato sauce 1 Cup
chili powder ½ tsp
cumin 1 tsp
garlic powder ½ tsp
salt ¼ tsp
oregano ½ tsp
diced tomatoes ¼ Cup
Directions
1. Melt butter in a pan with the oil. Add rice and cook for 3 minutes.
2. Stir in chicken broth, tomato sauce, chili powder, cumin, garlic powder, salt, oregano, and tomatoes.
3. Bring to a boil and stir occasionally.
4. Reduce heat, cover with a lid, and simmer for 20 minutes.
5. Remove from the heat and let sit for 5 minutes. Fluff rice with a fork and serve.
