Savoie is a Raclette style cheese made in the Haute-Savoie region of France since 1982. Made from pasteurised cow’s milk it is one of the only smoked cheeses not made using artificial smoke flavouring, instead is smoked over beech and geniévrier giving it a beautiful brown-orange crust and delicious smoky flavour.
The ivory pâte is supple and creamy in texture with a distinct and long lasting smoky flavour. The smoking process gives it a rustic element to its already nutty and caramel taste notes.
Brézain can be enjoyed as a table cheese, used in gourmet sandwiches and salads or even for raclette fondue or gratins due its good melting properties. Pair with a light red or a light dry white wine.
