the results of SDS-PAGE electrophoresis
demonstrated that there was a rapid increase in fragmentation of
the BSA protein following damage induced by AAPH in the absence
of the EPS. It might be caused that the OOH produced by AAPH
attacks on proteins and cause some structural modifications. Pretreatment with the EPS, however, at concentrations of
0.09e1.73 mg mL1, inhibited protein oxidation in a dosedependent manner. The effects of the EPS were most evident at
the highest concentration (1.73 mg mL1), at which the EPS almost
completely protected the BSA from oxidative damage. Similar results were obtained in the Cu2þ/H2O2 system
