Skimmed coconut milk (by product from virgin coconut oil production
Prepare starter of yeast culture from mixture of organic coconut sugar & skimmed coconut milk by pasteurizing the mixture and waiting for cooling down, then add yeast culture and ferment at ambient temperature for 24 hours
Prepare Coconut wine by pasteurizing the mixture organic coconut sugar & skimmed coconut milk and hold for 24 hours, then add starter of yeast culture and ferment at ambient temperature for 37 days.
Prepare starter of vinegar culture by mixing skimmed coconut milk with organic coconut sugar and sterilize the mixture. Cooling down the mixture and add vinegar culture then ferment at ambient temperature for 3 days
Making the vinegar by pasteurizing the mixture of skimmed coconut milk and organic coconut sugar, then let the mixture cool down.
Mixing ingredient 1, 2 and 3 in a clean stainless steel container and cover with plastic sheet, then making small tiny holes on plastic sheet and ferment at ambient temperature for 8 days.
Fill into glass bottle and close a cap
