As shown in Table 1, for each harvested sample the kernels rep-resented about 13% of the total depulped fruit weight (dry wholenut). However the variability of the kernel to nut (depulped fruit)ratio tends to increase with time, the SD passing from 1.2 to 1.5,then 2.0 (Table 1). The oil content as extracted with hexane was alsosimilar for each batch, independently of the harvest date. This lackof significant differences neither between the kernel/nut ratio, norregarding the oil content, all based on dry weight, tends to showthat harvest date does not quantitatively impact oil production,over the limited investigated maturation period of three months,which is actually the end of the production stage. Therefore, furtheranalyses were performed to evaluate the impact of fruit ripeningon Argan oil quality. For convenience, this exploratory study beingperformed at laboratory scale, the oil was extracted with solventfollowing a standard analytical procedure, and not with a screw-press.
