Table6 shows the effects of sugar addition on the biochemical characteristics of FSBM on DM basis. The CP content of FSBM was not affected by the addition of sugar (linear , P¼0 . 06 ) . In addition , the concentration of antigenic protein , glycinin or β-conglycinin , did not differ among treatments . However , the lactic acid content was greater (180.3 mmol/kg) when the sugar level was 0.5% (linear, Po0.01 ; quadratic, P¼0.08), and the pH was numerically lower than other treatments.
