Chicken with lemon and Garlic
Ingredients
1. 2 skinless chicken breast fillets
2. 2 tablespoon olive oil
3. 1 shallot,finely chopped
4. 4 garlic cloves, finely chopped
5. 1 teaspoon paprika
6. juice of 1 lemon
7. 2 tablespoon chopped fresh parsley
8. Salt and ground black pepper
9. Fresh flat leaf parsley,to garnish lemon wedges,to serve
Procedure
1. Remove the little fillet from the back of each breast portion. If the breast still looks fatter than a finger,bat it with a rolling pin to make it thinner. Slice all the chicken meat into strips.
2. Heat the oil in a large frying pan. Stir fry the chicken strips with the shallot,garlic and paprika over a high heat for about 3 minutes until cooked through.
3. Add the lemon juice,parsley,and season with salt and pepper to taste. Serve hot with lemon wedges, garnished with flat leaf parsley.
Remark
Chicken breast fillets have a little fillet strip that easily becomes detached. Collect these in a bag or container in the freezer for this dish
