This work demonstrated that gaseous ozone can be used to
inactivate E. coli O157:H7, S. typhimurium, and L. monocytogenes in
apple juice directly. The inactivation kinetics were described by the
Weibull model and the t5d values can be estimated. The efficacy of
ozone gas was significantly influenced by the solid contents of the
juice sample. E. coli O157:H7, S. typhimurium, and L. monocytogenes
did not demonstrate significant differences in death rate.
