2.1. Samples
Fourteen samples of fermented shrimp paste produced from planktonous shrimp (Acetes vulgaris) were purchased from difference local producers in Klongkone district, Samut Songkram province, Thailand. For each sample, three different lots were used. For each lot, three samples were purchased and pooled as the composite sample. All samples were packed in plastic bag and stored at -20 ºC prior to analyses.
