Presently, chemical food preservatives are commonly used to reduce or eliminate foodborne pathogens including S. Typhimurium contaminated in foods and beverages. However, their health risks have become a major concern of consumers because many health problems related to chemical food preservatives have been reported. Therefore, many research efforts have been made to find natural and safe antimicrobial agents to replace chemical food preservatives. Bacteriophages have
received increased attention as natural and safe biocontrol agents because the United State Food and Drug Administration (USFDA) have awarded some bacteriophages the “generally regarded as safe (GRAS)” status for application in foods to control Listeria monocytogenes and Escherichia coli.
