On the 6th day of storage, Group C was under the borderline limit of acceptability (1 point) with 0.60 points. Similarly, Group G was also under the limit with 0.95 point on the 10th day. Group GþOL did not reach the limit value throughout the storage period (Table 4). It’s concluded that, gelatin combined with orange leaf essential oil has a positive effect on the sensorial parameters of the shrimps. Panelists reported that orange leaf essential oil gave good flavor and odor to the shrimps.
