Aflatoxins are a group of highly toxic mycotoxins produced by f
ungi of the genus Aspergillus. The four main aflatoxins found in
contaminated plant products are B1, B2, G1 and G2 and are a
group of structurally related difuranocoumar
in derivatives that usually occur together
in varying ratios, AFB1 usually being th
e most important one. These com
pounds pose a substantial hazard
to human and animal health. IARC (1992) classified aflatoxin B1
in Group 1 (human carcinogen) and AFM in Group 2B (probable hum
an carcinogen). The liver is the primary target organ.
