Shrinkage measurement
The volumes of both fresh and dried durian chips were determined by a solid replacement method using glass beads with a diameter of approximately 0.106–0.012 mm (Raikham et al.,2013) and following the method of Yan et al. (2008). In each experiment, five sample chips were weighed and placed in to a can half full with glass beads inside. Other glass beads were then poured into the can until it was full. The masses of the samples, empty can, and can filled with glass beads were reported. An average volume of ten measurements in each experiment was reported. The volumes of fresh or dried durian chips (V) were calculated from the following equation
where Mb is the mass of the can filled with the glass beads (g),MS+bis the mass of the can with samples and glass beads (g),Mv is the mass of the empty can(g), MS is the mass of the sample (g), and bis the bulk density of the glass beads (g/cm3). The percentage of shrinkage of dried durian chips was calculated as follows:
where VO is the volume of the fresh durian chip (cm3) and V is the volume of the dried durian chip (cm3).
